Cauliflower Crust Veggie Pizza

This cauliflower crust veggie pizza is another way of making pizza using cauliflower crust pizza. Other variety includes cauliflower crust margherita pizza and cauliflower crust Hawaiian pizza. All of these pizza recipes are great and if you have guest coming in or you want to eat it with different flavors, you can try to switch toppings to create a variety of low carb pizza.

This veggie pizza is also loaded with cheese and simple vegetables toppings such as onions, bell peppers, olives and basil. You can also add your favorite vegetables, customize it based on your liking.

This pizza is a healthy and a low carb option for those who are watching their carb intake. While it doesn’t tastes like your ordinary pizza crust, you will definitely enjoy it as much. What’s more, you will satisfy your pizza craving without going out of the boundaries.

How to make cauliflower crust veggie pizza

First, you need a crust. You can check out my cauliflower pizza crust post where I’ve broken done the process of making a low carb pizza crust.

After you’ve done baking your cauliflower pizza crust, remove from the oven and let it stand for a minute before topping it.

Using a pastry brush, lightly brush olive oil over the top of the crust. This is to prevent the pizza toppings from making your pizza crust soggy.

Spread around 2-3 tablespoons of pizza sauce, leaving about ½ inch border. You can make your own pizza sauce or use a store-bought.

Then top with mozzarella cheese and your favorite veggies. Bake it for around 5-10 minutes or until cheese is melted. Remove from the oven and sprinkle fresh basil leaves.

How to serve

Veggie pizza can be serve as a snack or as a meal paired with either a hot or cold beverage. I personally like coffee to go with it.

How to store leftover pizza

To store, refrigerate the cooled pizza in a covered container for up to three days. To reheat, broil till heated in the oven.

Cauliflower Crust Veggie Pizza Recipe

  • Baking sheet / Parchment paper

Ingredients
  

Cauliflower Crust Pizza:

  • 3 cups cauliflower rice
  • 1 medium egg
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 1 cup parmesan cheese, grated

Toppings:

  • 1 tablespoon olive oil
  • 2-3 tablespoons pizza sauce, homemade or store-bought
  • 200 grams  mozzarella cheese
  • 3 pieces mushrooms, sliced thinly
  • 1 small green or red bell pepper
  • ¼-½ cup black olives, sliced
  • 5-6 pieces onion rings
  • 5-6 pieces basil leaves

Instructions
 

Crust:

  • Preheat oven to 400 °F/ 200 °C.
  • In a microwave-safe bowl, cover bowl with plastic wrap and microwave the cauliflower rice for 5 minutes on high. Remove out from the microwave, take away the cover and stir. Let it cool completely.
  • While waiting for the cauliflower rice to come to room temperature. In a mixing bowl, beat the egg, then add salt, pepper, garlic powder, and dried oregano.
  • After the cauliflower has cooled down, lay it on a kitchen towel or cheesecloth and squeeze out all of the liquid. Squeeze out as much liquid as you can.
  • Add the squeezed cauliflower rice into the egg mixture and toss the parmesan cheese. Mix until the mixture resembles like a dough. Spread the cauliflower mixture in the shape of a pizza crust into a parchment paper.
  • Bake for about 15-20minutes or until the crust is golden and crispy.
  • Let it cool for 1-2 minutes before putting the toppings.
    Note: Leave the oven turned ON while topping the crust.

Assembly & Baking:

  • Using a pastry brush, lightly brush olive oil over the top of the crust.
  • Spread around 2-3 tablespoons of pizza sauce, leaving about ½ inch border.
  • Top with mozzarella cheese, mushrooms, olives, green/red bell pepper, and onion rings.
  • Bake for around 5-10 minutes or until cheese is melted.
  • Remove from the oven and sprinkle with basil leaves.
  • Share and enjoy while warm!
