Cauliflower pizza crust has increasingly gained popularity and this cauliflower crust margherita pizza is one of the fantastic way to top it.  The ingredients are minimal but taste really great.

How to make cauliflower crust Margherita pizza

First, you need a crust. You can check out my cauliflower pizza crust post where I’ve broken done the process of making a low carb pizza crust.

After you’ve done baking your cauliflower pizza crust, remove from the oven and let it stand for a minute before topping it.

Using a pastry brush, lightly brush olive oil over the top of the crust. This is to prevent the pizza toppings from making your pizza crust soggy.

Spread around 2-3 tablespoons of pizza sauce, leaving about ½ inch border. You can make your own pizza sauce which is pretty simple to make or use a store-bought.

Then top with mozzarella cheese and tomato slices.

Bake in preheated oven of 400 °F/ 200 °C for around 5-10 minutes or until cheese is melted.

Remove from the oven and sprinkle fresh basil leaves.

How to store leftover pizza

It is rare that there will be a left over on this pizza. But in certain case, you can refrigerate the cooled pizza in a covered container for up to three days. To reheat, broil till heated in the oven.

  • Measuring cups

Ingredients
  

Cauliflower Crust Pizza:

  • 3 cups cauliflower rice
  • 1 medium egg
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 1 cup parmesan cheese

Toppings:

  • 1 tablespoon olive oil
  • 2-3 tablespoons pizza sauce, homemade or store-bought
  • 200 grams mozzarella cheese
  • 4-5 pieces cherry tomatoes, thinly sliced
  • 10-12 pieces fresh basil leaves

Instructions
 

Crust:

  • Preheat oven to 400 °F/200 °C.
  • In a microwave-safe bowl, cover bowl with plastic wrap and microwave the cauliflower rice for 5 minutes on high. Remove it from the microwave, remove the cover and stir. Let it cool completely.
  • While waiting for the cauliflower rice to come to room temperature. In a mixing bowl, beat the egg, then add salt, pepper, garlic powder, and dried oregano.
  • After the cauliflower has cooled down, lay it on a kitchen towel or cheesecloth andsqueeze out all of the liquid. Squeeze out as much liquid as you can.
  • Add the squeezed cauliflower rice into the egg mixture and toss the parmesan cheese. Mix until the mixture resembles like a dough. Spread the cauliflower mixture in the shape of a pizza crust into a parchment paper.
  • Bake for about 15-20 minutes or until the crust is golden and crispy.
  • Let it cool for 1-2 minutes before putting the toppings.
  • Note: Leave the oven turned ON while topping the crust.

Toppings:

  • Using a pastry brush, lightly brush olive oil over the top of the crust.
  • Spread around 2-3 tablespoons of pizza sauce, leaving about ½ inch border.
  • Top with mozzarella cheese and tomato slices.
  • Bake for around 5-10 minutes or until cheese is melted.
  • Remove from the oven and sprinkle fresh basil leaves.
  • Slice, share and enjoy while warm!
