What is cauliflower crust made of?

The pizza crust is comprised of cauliflower rice, parmesan cheese, egg, plus some seasonings. You can omit the seasoning if you like if you will be using heavy seasoned toppings. You personalize it as you want to make your favorite sort of pizza.

How to make cauliflower pizza crust

Begin by cooking the cauliflower rice, then place it in a microwave-safe bowl and cook for 5 minutes on high. Allow the cauliflower to cool for at least 5-10 minutes after removing it from the microwave, then squeeze it out with a kitchen towel or cheesecloth. Make sure you get every last drop of water out of it! The drier the better.

While you are waiting for the cauliflower to cool down, you can beat the egg, add the parmesan cheese and other spices or seasonings. Then add the squeezed cauliflower rice. Mix well until all ingredients are properly incorporated and form to a dough.

As you would with conventional pizza dough, spread the dough out on a parchment paper or a pizza pan.

Bake the crust for 10-15 minutes at 200 °C/ 400 °F, or until it begins to turn a wonderful golden color around the edges.

Then you can add your favorite toppings and popped into the oven and cook for about 5-8 minutes or until cheese melts. Remove the pizza from the oven once cheese has melted and slice.

Why is my Cauliflower Pizza Crust soggy?

Cauliflower has a very high moisture content, which is terrible for pizza crust. The crust will become soggy and weak as a result of too much moisture. For this reason, you have to remove the maximum amount of moisture in the cauliflower, either by squeezing it or by stir frying it in a pan.

I do not have any problem squeezing out with a clean cloth or cheesecloth, but if you do, feel free to pan fry it for the water content to evaporate.

Another tip is to not let it sit for a long time in the pan after taking it out from the oven. After a few minutes, transfer it into the cooling rack to cool slightly so it will not create moist that will make your pizza crust soggy.

Why is my cauliflower crust falling apart?

Make sure the crust isn’t too thick; a thickness of 1/4” is good. To ensure that the crust cooks evenly, make it a uniform size all the way to the edges. Preheat the oven to 200 °C/ 400 °F and bake the cauliflower crust on parchment paper. Otherwise, when you try to take the crust from the pan, it will stick and split apart.

I promise you, this cauliflower pizza crust won’t fall apart and you can eat it like a normal thin crust pizza.

One final point to remember while making a cauliflower pizza crust is to keep the pizza sauce and  toppings to a minimum. Keep the sauce and cheese low to avoid rehydrating the crust and making it mushy. (Remember, the crust already has some cheese baked into it!)

Tips in making the Cauliflower Pizza Crust

Here are my top tips when making the cauliflower pizza crust.

Use parchment paper. This will prevent the crust from sticking to the pan. It is essential so that it will not fall apart.

Squeeze out the moisture as much as you can. To make sure that your crust will not turn mushy and will be crispy.

Make it uniform and even as possible. This will even out the cooking and prevent the edges to overly cooked.

Transfer crust in a cooling rack after a minute. This will avoid the crust from forming moisture which will make your cauliflower pizza crust to sag.

This crust won’t replace any regular high-carb crust, but it’s perfect for when you’re on a low-carb diet.

Ingredients
  

  • 3 cups cauliflower rice
  • 1 medium egg
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 1 cup parmesan cheese

Instructions
 

  • Preheat oven to 400°F/ 200°C.
  • In a microwave-safe bowl, cover bowl with plastic wrap and microwave the cauliflower rice for 5 minutes on high. Remove it from the microwave, remove the cover and stir. Let it cool completely.
  • While waiting for the cauliflower rice to come to room temperature. In a mixing bowl, beat the egg, then add salt, pepper, garlic powder, and dried oregano. Set aside.
  • After the cauliflower has cooled down, place it on a kitchen towel or cheesecloth and squeeze out all of the liquid. Squeeze out as much liquid as you can.
  • Add the squeezed cauliflower rice into the egg mixture and toss the parmesan cheese. Mix until the mixture resembles like a dough. Spread evenly the cauliflower mixture in into a parchment paper. Make sure the crust isn't too thick; a thickness of 1/4” is good.
  • Bake for about 15-20 minutes or until the crust is golden and crispy.
  • Lightly brush with olive oil and top with pizza sauce and your favorite toppings. Place the pizza back into the oven and bake for 5-8 minutes or until cheese melts. Keep an eye on it because it might burn the cheese quickly.
  • Remove from the oven and transfer to a cooling rack to cool slightly.
  • Slice and serve while warm. Enjoy!
