To make these watermelon popsicles, you only need three ingredients.

  • Watermelon. Use the freshest, sweetest one you can find (check out how to pick a ripe watermelon). Cut into chunks and remove the seeds before blending.
  • Lemon juice. Brightens up the fruity flavor of the watermelon. You can substitute lime juice.
  • Sugar. The natural sweetness of watermelon varies so much. Sugar brings out the sweetness of the watermelon, but you can leave it altogether if you want, especially when your watermelon is naturally sweet. You can use honey or stevia as a substitute.

HOW TO PICK A WATERMELON

When it comes to watermelon, many individuals are unaware of how to purchase one. Since the watermelon is the star of this popsicle, it’s crucial that you choose a decent one. The type of watermelon you use will make a huge impact on the outcome of the recipe.

Choosing a good one will yield a delectable sweet and flavorful popsicle; selecting a bad one will yield a tasteless, bland popsicle. Here are some tips on choosing the right watermelon:

  • Look for a yellow spot (field spot). Many individuals make the mistake of looking for a watermelon that is completely green. You want a watermelon with a lovely, creamy yellow spot instead. This is where the watermelon sat on the ground, indicating that it had enough time to ripen before being picked.
  • It should feel heavy. Pick up the melon; it should feel weighty in comparison to its size. This indicates that it is ripe since it is full of juice.
  • Tap the watermelon’s underside. A ripe watermelon will have a hollow sound when you give it a good thump.
  • Look at the color of the skin. It should be dark green and dull, not shiny. A watermelon with lustrous skin may be under-ripe.
  • Check the shape. Round watermelons are sweeter, oval watermelons are more watery.

HOW TO MAKE HOMEMADE WATERMELON POPSICLES

To begin, chop the watermelon into large chunks and remove the seeds.

In a large blender, combine the watermelon chunks, fresh lime juice, and sugar.

Blend until the mixture is a completely smooth puree. It shouldn’t take more than a minute or two.

Taste the pureed mixture and decide whether or not you need to add some sugar.

Fill ice pop molds with the mixture and leave 1/2 inch of extra room at the top to allow the popsicles to expand as they freeze.

Freeze until solid for about 4-6 hours.

Dip the mold in warm water for about 15 seconds until the popsicles loosen from the edges if you’re having trouble removing them.

Enjoy these easy treats all summer long.

TIPS IN MAKING WATERMELON POPSICLES

  • Use a seedless watermelon so you won’t find any hard black seed pieces in your popsicles. If you use a watermelon with seeds, try to pick out as many of the seeds as you can. The small white seeds are fine to leave, but the black seeds won’t blend very well.
  • Use fresh lemon or lime juice, the stuff in the squeezy bottle does not taste the same.
  • When you pour the watermelon puree into the popsicle molds, leave a ½ inch gap at the top of the popsicle to allow for expansion.
  • You can diced some watermelon and place it in the mold before pouring the pureed watermelon mixture for added texture.
  • Start with less sugar and add more. If you’re not sure how sweet you want your popsicles, add a smaller amount of sugar (or honey), taste test after blending, and add more as desired. Keep in mind that watermelons vary in sweetness, so I recommend taste testing each time you make these.
  • Choose the best popsicle mold for you. Molds vary greatly in size and capacity, from ones with built-in sticks to molds that require a stick to be added. Read reviews to see which one will best suit your needs. Also, be aware that depending on the size of your molds you may end up with more or fewer popsicles than the recipe describes.
  • Make sure to use a BPA-free popsicle mold.
  • If you don’t have popsicle molds, you can use paper cups (just like what I did in this recipe) and pour the mixture into the cup on a flat baking sheet for stability. Place an aluminum foil on top and cut the piece where you will place the sticks. Once frozen, you can peel away the paper cups.

HOW TO SERVE

You can serve these watermelon popsicles on a hot summer day or during your lazy days by the pool. They are perfect as a light dessert or as a quick snack.

HOW TO STORE

Your homemade popsicles will last for a few days in the mold, which is ideal if you’re making them as a regular summer treat.

Remove them from the mold and place them in reusable plastic freezer bags or a plastic container if you won’t be eating them all in a few days.

You can freeze them in layers, but make sure each layer is separated with parchment paper. If properly stored, they will last for 2-3 months in the freezer.

If you like watermelon and popsicles, you must try this watermelon popsicle recipe. These sweet, delectable, and vibrant fruit pops combine two summertime favorites into one tasty dessert. The PERFECT end-of-the-day treat.
