Watermelon Popsicle Recipe

Equipment

  • popsicle molds or paper cups and aluminum foil
  • popsicle sticks
  • blender or food processor

Ingredients
  

  • 3 cups watermelon, diced and seeded
  • 2 teaspoons fresh lemon juice or lime juice
  • 2-3 tablespoons sugar or honey or stevia , optional

Instructions
 

  • In a blender, combine the watermelon chunks, fresh lime juice, and sugar (if using).
  • Blend until the mixture is a completely smooth puree. It shouldn't take more than a minute or two.
  • Taste the pureed mixture and decide whether or not you need to add some sugar (or sweetener). Note: popsicle the sweetness decreases as the mixture freezes.
  • Fill ice pop molds/ paper cups with the mixture and leave 1/2 inch of extra room at the top to allow the popsicles to expand as they freeze.
  • Freeze until solid for about 4-6 hours.
  • Dip the mold in warm water for about 15 seconds until the popsicles loosen from the edges if you're having trouble removing them.
  • Share and enjoy!
