In a blender, combine the watermelon chunks, fresh lime juice, and sugar (if using).
Blend until the mixture is a completely smooth puree. It shouldn't take more than a minute or two.
Taste the pureed mixture and decide whether or not you need to add some sugar (or sweetener). Note: popsicle the sweetness decreases as the mixture freezes.
Fill ice pop molds/ paper cups with the mixture and leave 1/2 inch of extra room at the top to allow the popsicles to expand as they freeze.
Freeze until solid for about 4-6 hours.
Dip the mold in warm water for about 15 seconds until the popsicles loosen from the edges if you're having trouble removing them.
