You will love this ube ice cream recipe just like my other ice cream recipes posts. It’s so easy to make without using an ice cream maker. And the ingredients are also simple and can be found in most supermarket or Asian grocery stores.

If you are fond of ube flavors, this ube ice cream will satisfy your sweet tooth and ube cravings. Not overly sweet and bursting with ube flavor, you wouldn’t believe how easy it is to make.

My daughter always call this ube ice cream as purple ice cream because of its color. She likes it so much because of its color and taste. We like it too and usually serve this after an afternoon meal.

WHAT IS UBE ICE CREAM

If you’re from Southeast Asia, particularly the Philippines, you’re already familiar with ube (pronounced OO-BEH) or purple yam, as it’s one of the region’s most significant crops.

Ube is slightly sweet with a nutty taste and deep purple color. It is a common ingredient in Filipino cuisine, and it may be found in a variety of recipes such as in desserts and other baked goods.

Ube ice cream is, of course, one of the most popular ube desserts!

This ube ice cream is made using our ice cream base. It is so easy to make with simple ingredients yet so delicious.

UBE ICE CREAM INGREDIENTS

Here’s what you’ll need in making ube ice cream:

Heavy whipping cream or whipped cream. Makes the ice cream extra creamy and smooth. It is recommended that you use heavy whipping cream for this recipe. The fat content is at least 35% which can be found in the container.

Sweetened condensed milk. Acts as the sweetener in this recipe. Condensed milk adds sweetness to the ice cream while also making it creamier, softer, and scoopable. You can substitute fat-free or low-sugar alternatives if you desired.

Ube extract. This gives out ube flavor and color to the ice cream. You can substitute ube powder if available or combine both ube extract and powder for more flavor.

HOW TO MAKE UBE ICE CREAM

You’ll be surprise how easy and straightforward this is to prepare. In no time, you’ll be eating your very own purple ice cream.

Begin by pouring chilled heavy cream in a large mixing bowl. Using an electric hand mixer or stand mixer at medium speed, beat cold cream for around 2-3 minutes or until it forms soft peaks. At this point, you just need to thicken the cream.

Pour in the cold sweetened condensed milk into the whipped cream and continue to whisk at high speed for about 3-5 minutes until it comes to medium to stiff peaks.

Add in the ube extract and continue to whip until fully incorporated. Taste it to ensure that it has the flavor you desire.

Transfer mixture into an 8.5” x 4.5” loaf pan or any freezer-safe container. Cover with parchment or wax paper, lightly pressing to flatten and fully covering the top.

Freeze for about 6 hours or preferably overnight. Scoop it up and enjoy!

TIPS IN MAKING UBE ICE CREAM

  • Keep the bowl, beater and ingredients as cold as possible. The condensed milk and whipping cream should come straight from the fridge (cold but not frozen).
  • You can either use a stand mixer or an electric hand mixer.
  • You can combine ube powder and ube flavoring for incredible color and flavor. If you want to enhance the color, you can use purple food color.
  • Take care not to overwhip the cream to prevent it from curdling.
  • Use a freezer-safe container to freeze the mixture. A rectangular metal loaf pan can be used to make this ice cream. Paper or plastic containers are also suitable because they do not cause your ice cream to become overly firm. I tried using a glass container, but it became completely frozen, making it impossible to scoop.
  • To prevent ice crystals from developing, remember to securely close or cover your ice cream bowl, box, or pan. I normally cover my ice cream with wax or parchment paper, but plastic wrap will also work. If you’re going to eat it later, keep it in a jar with a tight lid to avoid freezer burn.

HOW TO SERVE AND TOPPING IDEAS

You can serve this ube ice cream on a hot summer day or as an after meal dessert. Serve it with pandesal or loaf bread for a more satisfying afternoon snack. Topped it with your favorite sprinkles or chocolate syrup to add more flavor.

Store for up to 6 weeks in the freezer.

  • 1-2 tablespoons ube extract

Instructions

Notes

  • Make sure that heavy cream and sweetened condensed milk are cold.
  • Place beaters and mixing bowl in the refrigerator/ freezer 30 minutes before using them.
  • Remember to carefully close or cover your ice cream bowl, box or pan to prevent ice crystals from forming. Place a wax paper, parchment paper or plastic wrap above the ice cream.
