You don’t need to buy dressings because homemade dressings are so simple to make and way healthier than store-bought.

The benefit of creating your own salad dressings from scratch at home is that you can use high-quality ingredients and control exactly what goes into them. Plus, they’re free of preservatives and other strange ingredients that make them shelf-stable.

Also, homemade salad dressings, such as this homemade Greek salad dressing, taste better and can be modified and tailored according to your preference. I prefer to create my own homemade salad dressing because I have complete control over the quantity of flavor burst I put into them.

WHAT IS GREEK SALAD DRESSING

The base of a traditional Greek salad dressing is olive oil and red wine vinegar, similar to that of a Greek vinaigrette. It is made up with Dijon mustard, minced garlic cloves, dried oregano, salt, and pepper make up a typical Greek salad dressing, which is actually a Greek vinaigrette.

Making the dressing is as simple as whisking everything together once you’ve gathered all of your ingredients. Then sprinkle it over Greek Salad, or any green salad, or marinate meat using it.

GREEK SALAD DRESSING RECIPE INGREDIENTS

This Greek salad dressing recipe calls for a few simple ingredients that you probably already have in your pantry:

Extra-virgin olive oil. It provides richness and balances off the sharpness of the mustard and vinegar. In any salad dressing, make sure to use a high-quality extra-virgin olive oil (that you like the taste of!) because the flavor will show through.

Red wine vinegar. Noted for its acidic flavor and excellent taste, red wine vinegar is a staple in Mediterranean cooking. Red wine vinegar is a popular choice for making vinaigrettes and it’s also used in marinades and pickling solutions.

Lemon. The best lemon juice is freshly squeezed, but bottled lemon juice can be used as long as “lemon juice” is the only component.

Dijon mustard. All you need is a hint of it! The Dijon is meant to add a depth of flavor rather than taste “mustard-y.”

Garlic. For a pungent, flavorful depth. When making a salad dressing with fresh garlic, I like to mince it extremely finely. I squeeze a garlic clove through a garlic press or finely cut and mash with the side of my knife if I’m going to whisk or shake my dressing. If I’m making my dressing in a little food processor, I pulse the garlic clove first to chop it up, then add the rest of the ingredients and process.

Dried oregano. Adds a fresh, aromatic touch to the dressing. I usually use dried oregano in my dressing, but if you want to use fresh chopped oregano instead, use three times the amount… Instead of 1 teaspoon dried oregano, use 1 tablespoon fresh oregano.

Salt and pepper. As seasonings to bring out the flavors!

HOW TO MAKE GREEK SALAD DRESSING

You’ll want to make this homemade dressing every week because it’s so easy and quick to create.

Simply mix the ingredients together in a bowl except for olive oil. Once incorporated, slowly drizzle the olive oil while whisking constantly as you pour until the dressing is emulsified.

Or combine all ingredients together in a little food processor and then process.

Or shake them up in a jar.

With this masterpiece, you can top any of your favorite greens. I also like to use it as a marinade for chicken, steak, lamb, fish…the possibilities with this flavorful dressing are unlimited!

TIPS

  • If you think this vinaigrette is excessively sour or acidic, try adding a bit of sugar or a squeeze of honey. It won’t be enough to sweeten the dressing, but it will be enough to balance out the acidity.
  • If fresh raw garlic is too pungent for your taste, use 1/4 to 1/2 teaspoon garlic powder as substituted instead.

MAKING AHEAD AND HOW TO STORE

This dressing will last in the fridge for up to one week.

It will, however, harden a little when cooled because it is made with olive oil.

  • 3 tablespoons red wine vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • 1 large garlic, finely minced

  • ¼ teaspoon ground black pepper
  • ½ cup extra virgin olive oil

Instructions
