Chicken Cordon Bleu with Creamy Sauce

When I was young, I usually see chicken cordon bleu being served during special occasions. I thought that it was hard to prepare it because of how fancy the name sounds and how its looks. But it turns out that it is easy to make and with only a few ingredients needed.

The chicken breast is usually pounded thinly to make it easy to roll. It also helps in cooking the roll evenly. The nice crispy outside and creamy with a touch of saltiness on the inside is what makes this dish really delicious. This recipe is can be served as a main meal or for a celebration with creamy sauce on the side.


Tips in making chicken cordon bleu

  • Pound the chicken breast in a diagonal motion working from the center to the edge to avoid tearing the meat.
  • Use a cling wrap and wrap the breast when pounding so that meat will not stick to the meat mallet or rolling pin.
  • Make your chicken as thin as ¼ inch, so that it will be easier to roll it and the meat will cook evenly.
  • It is better to use sweet ham to balance the saltiness of the cheese and seasonings.
  • Roll tightly so the ham and cheese fillings will remain intact. Use a cling wrap to set the shape and chill for at least 30 minutes before frying.
  • Season the breading with a pinch of salt and pepper for a tasty outside crust.
  • Use medium-low heat when frying to avoid burning the outside while making it raw on the inside.
  • Alternatively, you can pan-fry it until you reach the desired golden brown color then pop it into the oven for around 15-20 minutes to make sure that the inside is also cooked through.

Equipment

  • Meat mallet or rolling pin
  • Mixing Bowl
  • Cling/ plastic wrap or toothpick
  • Skillet and turner or tong
  • Paper towels

Ingredients
  

Chicken preparation:

  • 3 large pieces skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 6 pieces swiss cheese or cheddar cheese
  • 6 pieces ham
  • canola oil or any preferred oil for frying

Breading mixture:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • salt and ground black pepper

Creamy Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup parmesan cheese

Instructions
 

  • Prepare the chicken by placing chicken breast between two pieces of plastic wrap on a cutting board and flatten to ¼ inch thickness using a meat mallet or rolling pin.
  • In a small mixing bowl, combine the salt, pepper, garlic powder, onion powder and paprika.
  • Lay one piece of the pounded chicken over a cling wrap and sprinkle with the spices. Massage it all over the chicken with your hands.
  • Place 2 ham slices and 2 cheese slice on top of the breast. Roll tightly and wrap in the cling wrap. Do this to all the remaining chicken. Chill for at least 30 minutes to an hour.
  • Heat oil in a skillet using medium heat. Take out chicken from the refrigerator and remove plastic wrap.
  • Prepare the breading mixture by seasoning flour, eggs and breadcrumbs with pinch of salt and pepper. Stir to combine.
  • Dredge rolled chicken in the flour, then dip into the eggs and finally roll into the breadcrumbs.
  • Fry the chicken in the pre-heated oil. For deep frying, you can cook it for about 12 minutes in medium-low heat. If you need to turn the chicken over to fry the opposite side, you need to cook it for around 7-8 minutes each side.
  • Remove the chicken from the skillet and drain in a plate with paper towel.
  • Let it cool down before slicing into serving pieces.
  • To prepare the creamy sauce. Melt butter in a pan, add garlic then flour. Pour the milk and stir continuously. Season with salt, pepper and add the parmesan cheese. Cook until it thickens.
  • Slice the chicken into serving sizes then drizzle with sauce on top. Garnish with chopped parsley if desired.
