It is then coated with corn starch, double-fried to crispy perfection before being coated with slightly sweet and garlicky honey garlic sauce. It’s finger-licking good.

Chicken Wings. I am using whole chicken wings chopped into two and discarding the tip of the wings.

Fish sauce. Adds umami flavor to the chicken wings. You can use 1 teaspoon of salt to substitute if you desired.

Fresh lemon juice. Adds tanginess and removes any odor off of the wings. You can substitute with fresh calamansi juice.

Ground black pepper. Adds slight spiciness into the dish, you can add more if you prefer.

Cornstarch. Acts as coating and seeps the moisture out of the chicken. It also makes your fried chicken extra crispy.

WHAT IS HONEY GARLIC SAUCE MADE OF

The honey garlic sauce is made up of simple ingredients.

Unsalted butter. Adds creaminess to the overall sauce. You can substitute olive oil or vegetable oil if preferred.

Garlic. Responsible for the signature garlicky flavor of the dish. Fresh is the best to use here.

Ginger. Complements and enhances the flavor of the sauce.

Soy Sauce. Adds saltiness and creates umami flavor to the dish.

Honey. One of the main stars of the sauce. You can reduce the amount to suit your taste.

White vinegar. Adds a slight tang to the sauce to make it more delectable.

Brown Sugar. Adds sweetness and makes the sauce glossy.

Sesame seeds and spring onions or chives for garnishing.

HOW TO MAKE HONEY GARLIC CHICKEN WINGS

Making the honey garlic chicken wings is very simple. First, you need to fry the chicken wings then coat them in a sweet and garlicky sauce.

Preparing the chicken wings

If you are using whole chicken wings, split them into 3 pieces at the joints and throw away the wingtips.

Combine the chicken wings, fish sauce, pepper powder, and lemon juice in a mixing bowl and mix well to fully combine. Set aside for 10 minutes or more.

Drain and discard the marinade and coat all chicken wings with cornstarch.

Heat enough oil in a large cooking pan or wok. Deep fry chicken wings by batch. Do not overcrowd the pan. Fry chicken while rotating with tongs a few times until cook through and becomes light brown in color for about 8-10 minutes.

Transfer to a strainer or plate lined with paper towels to drain excess oil.

When all chicken wings are cooked, lower the heat and double fry the chicken. Cook until golden brown and crispy about 5-8 minutes.

Preparing the honey garlic sauce

Using the same wok, remove the previous oil used for frying chicken. Heat wok and melt the butter and sautè garlic until lightly brown. Note: Use low heat because butter can easily burn over medium heat.

Add in ginger, soy sauce, and honey. Stir to combine then add vinegar and brown sugar.

Mix continually and cook until sauce is reduced and thickened. Adjust seasoning that fits your taste preference. Turn off heat.

Toss the crispy fried chicken into the wok and mix it well to glaze all chicken pieces. Sprinkle sesame seeds.

Transfer to a serving bowl and garnish with chopped spring onions or parsley.

COOKING TIPS

  • Season your chicken wings and allow little time for the flavor to seep in.
  • Double fry the chicken wings to have a nice and crispy chicken wings. It will remain crunchy even after it is coated with honey garlic sauce.
  • Make the sauce while double frying the chicken wings. Cooking the sauce only takes about 7-10 minutes. This sauce will be easier to stick if both the sauce and the chicken are hot, as the sauce will be more fluid.
  • Let the sauce reduced and thickened before tossing the fried chicken wings.

  • 2 pounds (907g) chicken wings split into 3 pieces at the joints, discarding the tip
