Happy Mother’s day!

Mother’s day is a celebration honoring the mother’s throughout the world. It is celebrated on different days in many parts of the world, most commonly in the months of March or May.

In UAE it was celebrated last 21st March. In the Philippines, we usually celebrate Mother’s day every second Sunday of the month of May. This year, it falls on the 10th and it is also the birthday of my dear sister in the Philippines. It’s a double celebration indeed!

Celebrate even in tough times

It is true that we in tough times right now and probably some has already forgotten to celebrate this day. We are too pre-occupied with the number of COVID-19 pandemic cases which are increasing every day. Probably, we are one of the victims or our family members or even have other problems such as unemployment and lack of financial resources. We are asking ourselves, when it will end.  

All things have its ending, and this virus is not an exemption. We remain hopeful that this pandemic will finish soon, by the grace of God. In the meantime, we can celebrate life and Mother’s day at the comfort of our homes. It doesn’t have to be extravagant, just a simple meal and greetings and appreciation will be enough.

Our simple celebration

Being a mother is a challenging and exciting mission. It helps me grow and mature as a person as I continue to nourish this new assignment from God. I learned more about myself, my strengths and weaknesses.

My daughter is turning two this year and I thank God for taking care of us up until this time. Truly, God never leave us nor forsake us.

Today, I decided to make a tuna and pesto pasta to celebrate this day. This is a pretty straightforward pasta recipe. Aside from tuna and pesto sauce as the main ingredients, I added some other vegetables like celery, zucchini and cucumber to make it healthier. It tastes really good, even my daughter likes it.

How to make tuna pesto pasta

It is easy to make this tuna pesto pasta. Just cook the pasta until al dente. Then sauté the garlic, onion and tuna. Add the vegetables and cook until tender-crisp.

Lastly, add the pesto sauce and combine the pasta. That’s it! Simple right?

I just want to take this opportunity to recognize the great contributions of mothers all around the world and to extend my greeting. Happy Mother’s day all the mothers out there, most especially to the best “Ima” in the whole world. I believe she did all the best she can in raising her 8 children, together with our father (it’s a team by the way). It is a tough job and we are truly thankful to both of them. We love you.

Tuna Pesto Pasta Recipe

This tuna pesto pasta is easy to prepare yet full of healthy flavors; a great way to celebrate Mother’s day!

Equipment

  • Cooking pot and stirring spoon
  • Tong
  • Strainer
  • Chopping board and knife
  • Chopper, if available

Ingredients
  

  • 250 grams pasta spaghetti
  • ¼ cup pasta broth this is the water where you cooked your pasta
  • ½ cup olive oil
  • 1 head garlic, minced
  • 1 medium onion, minced
  • 2 cans corned tuna or tuna flakes in can 1 can, 180 grams
  • 1 stalk celery, chopped finely
  • 2 medium zucchini, thinly sliced
  • 1 medium cucumber, thinly sliced
  • 5 tablespoons pesto sauce
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions
 

  • In a cooking pot, boil water with salt. When boiling, add pasta and cook according to package instructions.
  • Before draining pasta into a strainer, set aside ¼ cup of the pasta broth. Drain pasta and set aside.
  • Meanwhile, heat olive oil in a cooking pan over medium heat. Add onion, garlic and tuna and cook for a minute.
  • Add celery, zucchini and pasta broth and simmer for 2 minutes. Then add the cucumber slices and season with salt and pepper. Cook for about 2 minutes or until vegetables are soft.
  • Lastly, put in the pesto and stir thoroughly.
  • Turn off heat and pour in tuna and pesto mixture into the cooked pasta.
  • Mix until well combined. Serve and enjoy!
