Spaghetti with Clams

This spaghetti with clams uses little ingredients that makes it easy to prepare but taste absolutely amazing. It’s simple to make and takes about 20 minutes or so to cook, depending on how quickly you can bring a pot of water to a boil on your stove and cook the pasta.

The flavor of the garlic, anchovies and parsley and clams blend well with each other. Garlic is very common when making dishes like this and I can say that it really does make a difference on the dish. Not only it brings garlicky flavor but it also has a nice aroma on it that makes the dish appetizing.

I added a bit of anchovy sauce (bagoong balayan) to add seafood flavor and saltiness to the dish. It didn’t overpower the dish but complements the dish overall. You can skip this ingredients if you prefer but I highly recommend that you would try it.

Parsley is a versatile herb that provides a source of nutrients. You can easily find the in the herb section in the supermarket. This herb is rich in vitamins A, C and K. Adding parsley in dishes may improve bone health, protect against chronic diseases and provides antioxidant benefits.

Clams, I cannot emphasize enough that you need to soak and clean them properly before cooking them. Or else it will make your eating experience from good going to worst. Clams are usually being dug in the sand and that’s why it gets all that sand. So you need to soak them first so that they will throw up that sand. It is recommended to soak them overnight to release all the sands in them. Alternatively, you can soak and wash them several times to get the same results.

Chicken broth is also used as a soup base because it matches all the ingredients. If you don’t have chicken broth, you can dissolve half piece of chicken broth cube with ½ cup of pasta water. You may want to taste your sauce at this time to know if you need to add more salt.

Pasta should be cooked in boiling water with salt. You have to salt your water to give pasta some flavor. It should also be cooked al dente or cooked so as to be still firm when bitten. Look at the cooking instructions in the package as cooking time may vary.

You can prepare the ingredients while you are boiling the pasta to save time. You can cook the sauce simultaneously while the pasta is cooking so you can easily toss it in the sauce. To cook the sauce, just heat the oil and combine the garlic, anchovy, parsley, clams and chicken broth. Season it with little salt and pepper. It is good to immediately toss the pasta while it is still hot in the sauce. Transfer in a serving dish and garnish it with parsley and parmesan cheese.

Ingredients
  

  • 250 grams spaghetti pasta
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon anchovy sauce, optional
  • handful of fresh parsley, chopped
  • 20 pieces fresh clams, cleaned
  • ½ cup chicken broth or ½ piece chicken broth cube dissolve in ½ cup reserve pasta water
  • ¾ teaspoon salt, divided (for cooking pasta and seasoning)
  • ¼ teaspoon ground black pepper

Instructions
 

  • In a large pot, pour water and boil then add salt. Put pasta into the boiling water and cook until al dente then reserve ½ cup of pasta water before draining (if no chicken broth is available).
  • In a large wok, heat olive oil and add minced garlic. Cook over moderately high heat, stirring occasionally until the garlic is lightly browned. Then add anchovy sauce, parsley and clams. Mix well.
  • Add the broth, salt, pepper and simmer until the clams open and are cooked through about 5 to 7 minutes. Discard any clams that don't open.
  • Toss in pasta and mix well until all ingredients are combined and the pasta absorbs some of the juices.
  • Transfer in a serving dish and sprinkle with remaining parsley and parmesan cheese.
  • Share and enjoy!
