Mediterranean Salad with Prawns

“Quick and easy Mediterranean salad with prawns recipe that can be easily double as a side salad or main dish.”

This salad is perfect as starter to any meal. Packed with lovely and refreshing flavor – cucumber, tomatoes, the addition of tangy feta cheese and simple salad dressing brings it all together.

You can easily prepare this salad. Aside from marinating the prawns for 30 minutes (or more) and cooking it for around 2 minutes; you will only need to mix all ingredients. It is easy to throw together in just 10 or 15 minutes.   You can also add any extra proteins, veggies, olives or nuts that you might want to toss in. This salad can also easily be transformed into a delicious pasta salad if you would like to add in some cooked orzo or pretty farfalle.

How to make this Mediterranean salad

Marinate the cleaned prawns/ shrimps. You can marinate it for at least 30 minutes but it is recommended to marinate it more than 30 minutes or overnight.

Make your salad dressing. Just mix together all the salad dressing ingredients in a small bowl and its ready to use.

Mix your salad. Combine all your vegetables in a large bowl mixing bowl and drizzle with choice of salad dressing or with simple olive oil and lemon juice, seasoned with salt and pepper.

Additional tips

There are hundreds of ways to make this Mediterranean salad. So get creative and use what ingredients you love most (or need to use up in your kitchen!) and make this one your own. 

Add more protein such as cooked chicken, steak, pork, salmon or tofu.

Use extra vegetables such as red bell peppers or radishes that adds color to the salad.

Add olives, other nuts such as pine nuts, almonds or whatever might sounds good or available in your pantry. Toss it in to add some crunch in your salad.

Ingredients
  

Shrimp/ Prawn Marinade:

  • 250 grams fresh prawns/ shrimps — heads and shells removed
  • 2 cloves garlic, minced
  • 1 teaspoon chili flakes
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil, divided (for marinating and frying)

Fruits & Vegetables Salad:

  • 100 grams lettuce, chopped into bite size
  • 1 large cucumber, chopped into bite size
  • 150 grams cherry tomatoes, halves
  • 1 large avocado, cubed
  • 2 stalks spring/green onion, chopped
  • handful of parsley/ coriander
  • salt
  • ground black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 100 grams feta cheese — optional
  • handful of cashew nuts — optional

Salad Dressing (optional)

  • 3 tablespoons olive oil
  • 3 tablespoons lime juice
  • 1 clove garlic
  • 1 teaspoon chili flakes

Instructions
 

  • In a mixing bowl, combine shrimp, garlic, chili flakes, salt, pepper and olive oil. Mix thoroughly and marinade for at least 30 minutes (or more). Set aside.
  • In a skillet, pour 1 tablespoon of olive oil and put the marinated shrimp. Cook for at least 2 minutes or until sides are all bright red. Remove from heat and cool down a bit.
  • In a large mixing bowl, mix together lettuce, cucumber, cherry tomatoes, avocado, spring onion, parsley, salt and pepper. Then add olive oil and lime juice, feta cheese (if using) and cashew nuts (if using). Mix just enough to incorporate with all ingredients.
  • Place the cooked prawns/ shrimps into the salad and slightly mix.
  • If using Salad Dressing: Note: You can omit using lime juice and olive oil in Step 3 and do this step instead.
    Combine all the ingredients for the salad dressing and mix thoroughly until well combined. Sprinkle over the salad and mix slightly to cover the salad. Add feta cheese (if using), cashew nuts (if using) and cooked prawns/shrimps and mix.
  • Serve and enjoy!
