These blueberry cream cheese desserts in a cup used crushed Oreo biscuits with a light and creamy no-bake cream cheese layer is a fabulous make-ahead dessert choice for any occasion!
2cupsoreo, crushed (divide into half)-- around 20 biscuits
1tablespoonsbutter, melted
1cupfresh blueberries-- reserve some for toppings
4tablespoonssugar, divided
1tablespoonwater
1cupwhipped cream, cold
4tablespoonsfull block cream cheese, room temperature
Instructions
Combine 1 cup of crushed oreo with melted butter. Mix well. Put 1 tablespoon of the mixture into each cup.
Flatten oreo mixture in each cup by using the bottom of one cup. Refrigerate for 10 minutes.
In a sauce pan, combine blueberries and 2 tablespoons sugar and stir. Using low heat, simmer blueberries-sugar mixture.
Add 1 tablespoon water. Cook for around 2 minutes or until slightly softened. Remove from heat and transfer to a small bowl to cool down.
In a medium mixing bowl, pour cold whipped cream. Using a handheld electric mixer in medium-high speed, beat whipped cream until smooth. Add 2 tablespoons of sugar and continue to beat. Then add cream cheese and whisk until well combined.
Add 1 tablespoon of sweetened blueberry mixture into each cup. Pipe cream cheese mixture in each cup. Flatten cream using the back of a spoon.
Layer with 1 tablespoon of crushed oreo. Pipe another layer of cream cheese mixture. Flatten cream. Sprinkle some crushed oreo and top with fresh blueberries. Refrigerate for at least an hour or more.
