In a medium sauce pan, pour water and bring to a boil.
When water begins to boil, add the cassava and continue to cook for about 3 minutes or until the cassava is almost done.
Add brown sugar and vanilla extract once the water has started to evaporate or has reduced to half.
Reduce to a low heat and continue to cook while stirring continuously for about 2-3 minutes or until the cassava is thoroughly cooked and the sauce has thickened.
Transfer to a serving bowl and serve.
