Sweetened Cassava (Minatamis na Kamoteng Kahoy)

Sweetened cassava or minatamis na kamoteng kahoy is a simple snack or dessert you can prepare in matter of minutes. Though simple to cook but this snack is so delicious and filling. The only hard part is preparing the cassava.

I love my sweetened cassava cold and we usually add fresh or evaporated milk to add more flavor. What I like about cassava is that it is not sweet and the sweetness comes only from the sugar. So you can adjust the sweetness based on your preference.


WHAT IS SWEETENED CASSAVA

Sweetened Cassava, also known as minatamis na kamoteng kahoy, is a simple Filipino delicacy that is both easy to make and tasty.

This easy dessert is made of cassava, brown sugar, vanilla extract or essence, and water. The preparation is also quite simple.

You just need to boil the cassava with water before adding the sugar and vanilla extract or essence. The liquid will begin to thicken as the sugar caramelizes and water evaporates.

This sweetened cassava recipe is not too sweet and you can really enjoy the flavor of the cassava. The cassava are coated with caramelized sugar and are tender on the inside.

COOKING TIPS

  • Cook the cassava first before adding sugar to avoid burning the sugar.
  • Use low heat once you added the sugar to prevent the sugar from burning and the liquid to evaporate faster.

HOW TO SERVE

Serve this sweetened cassava as dessert or snack. You can serve it either warm or cold. You can also add milk or coconut milk to add creaminess to the dessert.

Equipment

  • Chopping board and knife
  • Cooking pan and wooden spoon
  • Measuring cup and spoon

Ingredients
  

  • 1 liter water
  • 400 grams fresh cassava, cut into cubes
  • ¾ cup brown sugar
  • 2 teaspoons vanilla extract

Instructions
 

  • In a medium sauce pan, pour water and bring to a boil.
  • When water begins to boil, add the cassava and continue to cook for about 3 minutes or until the cassava is almost done.
  • Add brown sugar and vanilla extract once the water has started to evaporate or has reduced to half.
  • Reduce to a low heat and continue to cook while stirring continuously for about 2-3 minutes or until the cassava is thoroughly cooked and the sauce has thickened.
  • Transfer to a serving bowl and serve.
