5tablespoonsoil, divided-- 4 tablespoons for frying and 1 tablespoon for sauteing
½kilotilapia, cut into half-- or 2 big pieces
3clovesgarlic, chopped finely
1mediumonion, chopped finely
4tablespoonstomato sauce
4tablespoonssoy sauce
¼teaspoonground black pepper
2cups coconut milk
½teaspoonchili powder/ flakes-- or 2 pieces fresh siling labuyo
Instructions
In a skillet, fry the tilapia until crispy. Set aside.
Heat the oil in a sauce pan and sauté garlic and onion.
Once translucent, add tomato sauce, soy sauce and ground black pepper. Stir well.
Add the coconut milk and let the sauce come to a boil and becomes thick.
Add chili powder/ flakes and mix until it is fully incorporated.
Place the fried tilapia into the sauce and turn off the heat.
Serve with steamed rice and enjoy!

If you are using coconut milk powder, dissolve 4 tablespoons to 1 cup of water to make a thick sauce.Use 2 tablespoons of tomato paste if you are substituting it with tomato sauce.You can use any chili that is available in your pantry/ grocery stores and adjust the spiciness based on your spice tolerance.
