Kalderetang Tilapia

Maybe you might hear about kaldereta recipes for chicken, pork, and beef, but have you heard of kalderetang tilapia?

This is one of my favorite fish recipes as it catches my love for spicy and creamy dishes. Every time my mom cooks this, I really can’t help myself but eat more rice servings than I should.

Sometimes mom’s friends will offer her tilapia and since she wants to help her friends, she would buy more than a kilo. Most of the time, we just fry them and some of it we’ll make this kalderetang tilapia.


How to cook kalderetang tilapia

This recipe is just simple to make yet so delicious.

You just need to fry the tilapia first and make the sauce. The sauce is made up of tomato sauce, soy sauce, coconut milk, and chili.

You can substitute tomato sauce with tomato paste; just reduced the amount because it’s more concentrated.

As for the coconut milk, I used coconut milk powder instead of natural coconut milk as this is not always available in the supermarket.

I made the mixture by adding 1 cup of water and 4 tablespoons coconut milk powder as this will make the sauce thick.

Since “siling labuyo” is also rare in the supermarket, I opted to use chili powder/ flakes. You can adjust the spiciness based on how you can tolerate it, just start with a small quantity.

Why tilapia?

Tilapia is one of the common fish found in almost supermarkets or wet markets. It is also affordable and doesn’t taste very fishy. It doesn’t have many small bones like the sardines or the milkfish (bangus) which can get into your throat if not careful. Ouch!

Equipment

  • Frying pan
  • Cooking/ sauce pan
  • Stirring spoon
  • Chopping board and knife

Ingredients
  

  • 5 tablespoons oil, divided — 4 tablespoons for frying and 1 tablespoon for sauteing
  • ½ kilo tilapia, cut into half — or 2 big pieces
  • 3 cloves garlic, chopped finely
  • 1 medium onion, chopped finely
  • 4 tablespoons tomato sauce
  • 4 tablespoons soy sauce
  • ¼ teaspoon ground black pepper
  • 2 cups coconut milk
  • ½ teaspoon chili powder/ flakes — or 2 pieces fresh siling labuyo

Instructions
 

  • In a skillet, fry the tilapia until crispy. Set aside.
  • Heat the oil in a sauce pan and sauté garlic and onion.
  • Once translucent, add tomato sauce, soy sauce and ground black pepper. Stir well.
  • Add the coconut milk and let the sauce come to a boil and becomes thick.
  • Add chili powder/ flakes and mix until it is fully incorporated.
  • Place the fried tilapia into the sauce and turn off the heat.
  • Serve with steamed rice and enjoy!

Notes

If you are using coconut milk powder, dissolve 4 tablespoons to 1 cup of water to make a thick sauce.
Use 2 tablespoons of tomato paste if you are substituting it with tomato sauce.
You can use any chili that is available in your pantry/ grocery stores and adjust the spiciness based on your spice tolerance.
