This deviled eggs with relish recipe has a creamy richness to it, combined with a sweet and tangy flavor. So simple to make with only few simple ingredients - an ideal appetizer for get-together and celebrations.
paprika, chopped dill, parsley or chives as garnish
Instructions
In a medium saucepan, place the eggs in a single layer and add enough cold water to cover them by 1 inch.
Bring the water to a rolling boil about 10 minutes. Cover and remove the pan from the heat. Set it aside for 7 minutes. Drain the eggs and place them in cold water to cool slightly. After 2-3 minutes, remove water and replace with another cold water to cool completely.
Peel the eggs and split them in half, lengthwise. Scoop out the yolks with care using a teaspoon and place them into a medium mixing bowl. Place egg whites on a separate plate.
Mash yolks with a fork until creamy and smooth. Add mayo, mustard, pickle relish, pickle juice and season with salt & pepper to taste.
Place egg yolk filling in a piping bag with big star tip and pipe into each egg white cavity until fully stuffed. You can also use an ice cream scoop or tablespoon if preferred.
Chill and sprinkle with paprika or any of your preferred toppings before serving.
Serve and enjoy!

Notes
Make sure your yolks are completely cooked.
For quick whipping, combine all of the ingredients for the yolk filling except the pickles in a food processor or hand mixer and process until smooth, then fold in the relish.
Use a piping bag with big star tip in piping the filling for a mess free and beautiful presentation.
Use smoked or sweet paprika for a more traditional flavor. Alternatively, you can sprinkle flaky sea salt, sriracha, pickled jalapenos, pickled onions, bacon, feta cheese, or fresh herbs like dill, parsley or chives to brighten things up a little.
You can cook an extra egg and use the yolk (but not the whites) to add a little more filling to make them look more stuffed.
