My sister and I have a habit of looking into our stocks during the weekend to see what we can cook for a meal.  Sometimes we buy food items without any recipes in mind.  One time, there were mushrooms, bunch of spinach and our last night’s grilled chicken left-over sitting in the refrigerator. She just put them all together and it turns out to be good and tasty. You see, most of the time, those experimental recipes turns out to be better than expected.

She gave me this idea how to make this recipe and I just adjust it a little bit by adding other vegetables and seasonings.


Main Ingredients and their health benefits

Initially, there are only 3 main ingredients in this recipe, aside from the regular condiments. These are the chicken meat, mushrooms and a bunch of spinach. However, I added green bell peppers and zucchini which are available in our pantry; just to add more color, nutrition and flavor to the dish. You can skip the last two if they are not available or you can use whatever vegetables you prefer.

The health benefits of this chicken with vegetables recipe are massive. Chicken is known for its high protein content. Mushrooms are rich in B vitamins: riboflavin, niacin and pantothenic acid and have a powerful antioxidant called selenium, which helps support the immune system and prevent damage to cells and tissues. Spinach is rich in iron, which plays an important role in the function of red blood cells. It is also an excellent source of vitamin K, A, C, B2, folate, manganese and magnesium.

Zucchini is packed with nutrients including Vitamins C and A, potassium, folate, and fiber. Green bell pepper or generally bell peppers are rich in many vitamins and antioxidants, especially vitamin C and various carotenoids. That’s a lot of nutrients coming from these ingredients. So I suggest keeping it all to maximize all the health benefits you can get from this recipe.

It is good to note that you don’t need to add any water to this recipe as the vegetables will add their natural liquid into the dish. Another thing is that you can marinate the chicken beforehand and keep it in the fridge overnight to get all the nice flavorings. But you can also do it before preparing/ cutting all your vegetables.

Stir-Fry Chicken with Vegetables Recipe

Equipment

  • Cooking pan/ wok
  • Stirring spoon
  • Chopping board and knife

Ingredients
  

For Chicken Marinade:

  • 450 grams chicken meat/ breast, cut into strips
  • 2 tablespoons soy sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1 tablespoon sugar

For Stir-fry:

  • 4 tablespoons oil, divided
  • 5 cloves garlic, minced
  • 1 small onion, diced
  • 250 grams fresh mushrooms, thinly sliced
  • 2 small zucchini, thinly sliced
  • 3 tablespoons oyster sauce
  • 1 small green bell pepper, sliced diagonally
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt
  • 2 tablespoons soy sauce
  • 1 bunch spinach

Instructions
 

  • Marinate chicken by combining soy sauce, garlic powder, ground black pepper and sugar. Mix well and set aside. Note: you can do this step before cutting your vegetables so the flavoring will seep into the chicken meat.
  • In a cooking pan/ wok, using high heat, cook garlic and onion.
  • Add marinated chicken strips and lower heat to medium. Cook until golden brown, remove from the wok/ pan and set aside.
  • In the same wok, heat oil and put the mushrooms, stir until somewhat soft.
  • Add the zucchini and mix thoroughly. Put the oyster sauce and add the green bell pepper. Cook for a minute. Season with soy sauce, salt and pepper.
  • Put in the spinach, stir until slightly cooked. Turn off the heat.
  • Combine the marinated chicken into the vegetables. Stir well until fully incorporated.
  • Transfer to a serving bowl. Serve and enjoy!
