Moist Ube Cheesecake Bars

Who loves ube? Who loves cheesecake? I bet many of us love these two. I love both of them and combining them together in a one sweet treat is heaven.

These ube cheesecake bars is a combination of ube batter and cheesecake batter. So you don’t have to choose one or the other. The texture is perfect and has a soft and moist cake base with creamy cheesecake.

The design on top makes it look elegant and it is easy to make. You can reserve a small amount of the ube batter and randomly placed it on top of the cheesecake batter. Then using a toothpick, just drag the toothpick through the cake batter to get that pretty swirl. You are free to skip this if you are not comfortable but I guarantee you it is so simple to do.

Tips in making ube cheesecake bars

  • Make sure that all your ingredients are in room temperature. This will ensure that your ingredients will blend properly and will make a smooth batter.
  • Homemade ube halaya is the best to use in this recipe. But if it is not available you can also use store-bought ube jam in a bottle.
  • Add your eggs one at a time and beat around 15 minutes or just until blended. As much as possible, avoid over beating the batter to not incorporate too much air.
  • Oven temperature varies, so make sure to check your oven before the set time. This ube cheesecake bar is done as soon as the cheesecake topping has just set. Do not over bake or the cake will become dry.
  • If you want your bars to be taller, you can use smaller pan like what I did.  Or if you want it a bit thin you can use a wider and longer pan. Use whatever pan that is available with you, be it a square or rectangle pan. But you just need to adjust the baking time not to overcook the bars.
  • Let your ube cheesecake bar cool down properly before cutting it to slices. The middle part will be a little bit wet when it goes out of the oven, so you have to let it set completely to make a nicely cut bars.
  • Store left over ube cheesecake bars in an airtight container. They will last up to 5 days chilled in the refrigerator. If you want them warm, you can microwave them for about 10 seconds.

Equipment

  • 7"x11" Baking pan
  • Parchment / Baking paper
  • Mixing bowls
  • Measuring cups and spoons
  • Electric mixer or whisk

Ingredients
  

Ube batter:

  • ½ cup melted butter
  • ¾ cup white sugar
  • 2 large eggs, room temperature
  • ½ cup ube halaya or ube jam
  • 1 tablespoon ube flavoring
  • 1 and ¼ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder

Cream cheese batter:

  • 8 ounces cream cheese, full fat at room temperature
  • ¼ cup white sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla essence/ extract

Instructions
 

  • Preheat oven to 180 °C/ 350 °F. Line baking pan with parchment paper and grease. Set aside.
  • Prepare the ube batter: In a large bowl, combine melted butter and sugar. Beat until well combined. Add the eggs one at a time, beating well after each addition. Add in ube halaya/ jam and ube extract. Whisk until well blended.
  • Place a colander over the mixing bowl and combine flour, baking powder and salt. Sift then stir using a spatula and a mixer just until combined. Do not overmix. Reserve about 1/3 cup cake batter and set aside.
  • Pour the cake batter onto the prepared pan. Spread evenly then set aside.
  • Prepare the cream cheese batter: In a medium bowl, beat cream cheese until it becomes creamy. Combine the sugar and beat well. Add the egg and vanilla extract. Beat until mixture becomes smooth. Pour cream cheese mixture over the ube cake batter and spread evenly.
  • Randomly place a small amount of the ube cake mixture all over the cream cheese batter. Drag a clean toothpick or bamboo skewer through the cake batter to get a pretty swirl.
  • Bake for about 25-30 minutes or until the top is nearly set. Cool completely before cutting into squares.
  • Serve and enjoy!
