WHAT ARE CHOCOLATE TRUFFLES

Chocolate truffle is a little, round ball of pure chocolate with a creamy chocolate ganache filling that melts in your mouth. Its main ingredients are chocolate and heavy cream. Truffles are usually dusted with cocoa powder but can also be sprinkled with different coating such as nuts.

Truffles got their name from “truffle”, an edible mushroom-like fungus of the genus Tuber (popular in fancy cuisine) because of their physical resemblance. Fortunately, the traditional chocolate treat is far less expensive!

When making these treats, you should use block chocolate or chocolate bars (not chocolate chips) with a cacao concentration that is preferably 60% or higher since they are the best types of chocolate to use while preparing truffles.

Any chocolate with a cacao content more than 80% may be too bitter and contain too much dry cacao solids to adequately emulsify, leading to a fractured or inconsistent ganache.

  • Chocolate bar: I useddark chocolate bar in making this truffle recipe. The recommended chocolate is that which has at least 62% cacao. The final result will be impacted by the quality of this ingredient. But you can use any chocolate you want. Make sure the chocolate is finely chopped so that it will melt through even with the hot cream’s residual heat.
  • Heavy cream. I used cream with 35% fat. Do not use milk or half-and-half as a substitute for heavy whipping cream. Non-dairy cream, such as coconut cream, may be used in place of the cream.
  • Unsalted butter. It is the key ingredient that gives these truffles their ultra-smooth, velvety texture. You can also use salted butter, but you have omit the salt in this recipe. Also be aware that your truffles will taste a little saltier than they would if you used salted butter.
  • Vanilla extract: It adds flavor to the truffles. You can also substitute coconut, peppermint, or almond extract for vanilla extract.
  • Pinch of salt as flavor enhancer.
  • Cocoa powder or other coatings. You can decorate your truffles simply with cocoa powder or other with sprinkles, chocolate curls, or chopped nuts. You can also use cocoa powder, whether it’s sweetened or not.

HOW TO MAKE CHOCOLATE TRUFFLES

Making chocolate truffles is one of the easy candies you can make. All it takes are cream, chocolate, a little extra flavoring and time.

How to make chocolate truffles-1

To begin, finely chop the chocolate bar to make your chocolate melt faster. Transfer in a heat-proof bowl.

In a small saucepan over medium-low heat, warm the cream. Just bring it to a simmer. It is not ideal to overheat cream because it can scald or burn and impart a burnt flavor to your truffles. Alternatively, you can use microwave and microwave for 2-3 minutes, with 1 minute interval, until heated through.

Toss the unsalted butter into the chopped chocolate and pour the heated cream. Let it sit for 3-5 minutes before stirring.

Add the vanilla extract and pinch of salt.

Mix the chocolate mixture until smooth, thick, and shining. Tip: If there are any remaining chunks of unmelted chocolate, melt them in the microwave on 50% power for 20 second intervals stirring in between.

Line a small bowl or container (I used 7×4-inch) with cling wrap, pour the chocolate ganache and cover the top with the plastic wrap.

Place in the refrigerator and chill the mixture for about 30 minutes to 1 hour or until solid.

In a chopping board, cut the chilled chocolate into equal parts, around 1 teaspoon each. If you have a small cookie or ice cream scoop, you can scoop the mixture before forming into a ball.

Form each chocolate into balls using your hands. You can put gloves for less mess and sticking.

Place the balls on a platter lined with parchment, then chill or freeze them until you’re ready to serve.

RECIPE VARIATIONS

You can customize your truffles and add some intriguing flavors to match your personal touch. Here are some suggestions to make a variety of truffles flavor:

  • Mint truffles. Use ¼ teaspoon of peppermint extract instead of vanilla. You can also steep mint leaves into the cream while heating and let it rest for about an hour. Then, strain and reheat the cream to continue preparing the ganache.
  • Cinnamon truffles. Stir in 1 teaspoon ground cinnamon into the mixture. You can also use cinnamon sticks and do the procedure as mentioned for mint truffles.
  • Spiced truffles. Add some cayenne to add a hint of heat.
  • Espresso truffles. Add 1 teaspoon of regular or decaf instant coffee into the mixture before chilling.
  • Peanut butter truffles. Combine 1-2 tablespoons of softened peanut butter or almond butter into the cream and melted chocolate.
  • Orange Truffles: Mix in orange zest into the melted chocolate before chilling.
  • Nutty truffles. Aside from making it as coating, you can add in crushed pistachios, pecans, or walnuts into the mixture.

Making chocolate truffles is great, but the best part is deciding what to roll them in. Here are some of suggested coating for them:

  • Cocoa powder. The classic coating. Dutch process, unsweetened, or even sweetened cocoa powder can be used.
  • Shredded coconut. Sweetened or unsweetened desiccated coconut will work.
  • Sprinkles. Use whatever color to fit the occasion or holiday. Just remember to stay away from crisp/crunchy sprinkles if you want soft truffles. For the holidays, we also like to roll them in finely crushed candy canes.
  • Finely chopped chocolate. You can use a food processor to chop it, you can also shave it.
  • Melted chocolate. If you choose this option, make sure the rolled truffles are thoroughly cold before dipping them.
  • Finely chopped nuts. Excellent choices include walnuts, pecans, almonds, pistachios, hazelnuts, macadamia nuts, and peanuts. You can use it plain or toasted.
  • Crushed Oreo cookies or any chocolate cookies. If you’re a fan of Oreo cookies, you can add chocolaty flavor.
  • Sanding sugar gives them a shiny appearance and color. You can use pink, red, and white for Valentine’s Day; pastel colors for Easter; red, silver, and gold for Christmas and silver and gold for New Year!
  • Edible gold dust for a glitzy appearance.

RECIPE TIPS IN MAKING THESE EASY CHOCOLATE TRUFFLES

  • Make sure to use high-quality chocolate bars, as the finished product will only be as tasty as the chocolate you use.
  • For the best flavor, use dark or semisweet baking bars with an intensity ranging from roughly 60% to 75%. But if you only have chocolate chips, that will still work but they won’t provide the same final product or quality. PRO SUGGESTION: Add 1/2 a teaspoon of vegetable, canola, or avocado oil to your chocolate chips if they aren’t melting evenly. Stir well while microwaving.
  • Chop the chocolate finely, it’ll melt more quickly and evenly.
  • Make sure to plan ahead and give yourself ample time for refrigeration. The chocolate mixture needs to harden in the refrigerator before molding because it will be extremely runny.
  • Forming the truffles into flawless balls can become messy very quickly. If you have ice cream scooper, you can use it to scoop out the truffles before forming them into balls.
  • You can cut harden chocolate mixture into equal parts if you do not have an ice cream scooper before shaping them into a ball.
  • If the ganache is too stiff to roll, let it sit at room temperature until it is manageable.
  • If possible, put on food-safe gloves when rolling; gloves will help the chocolate stick less than using bare hands.
  • Wash your hands in between rolling of 2-3 truffles.
  • Take these out of the refrigerator 20 to 30 minutes before serving because they taste best at room temperature.

FREQUENTLY ASKED QUESTIONS

The chocolate doesn’t melt when I pour the warm cream.

You might have chopped your chocolate in big chunks. Consider cutting them up into little pieces. This makes it much simpler and easier for the chocolate to melt uniformly.

If the cream has already been added to the chocolate and you don’t want to waste it, just cover the bowl with a paper towel and microwave the mixture for 30 second intervals, stirring in between, until it is smooth.

Can I use milk chocolate, white chocolate, or bittersweet chocolate to make these truffles?

Yes! This truffle recipe can be made with any type of chocolate. It is highly recommended that you use high quality chocolate though. As a result, it will melt freely and won’t clump quickly.

You can eat them right from the refrigerator. Or for softer texture and flavor, let them rest for 20 minutes at room temperature before serving.

When planning to give as gifts, be sure to keep your chocolate truffles in the refrigerator or freezer. After that, transfer them to the chocolate box or bag of your choice before gifting them to the happy recipient. Don’t store the truffles at room temperature because the ganache is made with cream.
