Cookies and Cream Ice Cream

This recipe for cookies and cream ice cream is as easy and simple as the other no-churn ice cream recipes posted in this blog. You can check out my mango ice cream and avocado ice cream to make a variety of flavors.

I will be using the same base and process of making this ice cream just like in my previous ice cream post. I can’t get enough of the simplicity of this recipe.

What I like about this ice cream base recipe, is that you can put any flavors you like and will still have the same creamy results. You can play with different fruits or flavors, this time it will be Oreo cookies.

Aside from being super easy to prepare, it only requires 3 main ingredients. The only hardest part will be the waiting time for it to freeze.

What is cookies and cream ice cream

Cookies and cream, sometimes called cookies ‘n cream or cookies ‘n crème is an ice cream flavor that uses chocolate cookies. This recipe for cookies and cream is creamy with crunchy chunks coming from the cookies. The combination is so delicious and tasty.

How to make Oreo ice cream

Begin by preparing your tools. Place beaters and mixing bowl in the refrigerator/freezer 30 minutes before beginning. Remove the bowl from the freezer when ready to whip.

Beat the heavy cream, using an electric mixer into a soft peak, about 2-3 minutes.

Stir in the sweetened condensed milk into the whipped cream and continue whipping at high speed for about 3-5 minutes until it comes to medium to stiff peaks.

Add the chopped Oreos and fold gently to combine.

Pour the ice cream into a freezer-safe container except for glass. Top the ice cream with additional broken or crushed Oreo pieces. Cover top with parchment paper, close the container lid, and freeze overnight. Once frozen, scoop and serve!

3 Ingredient recipe for cookies and cream ice cream

Whipped Cream or Heavy whipping cream. The cream creates smooth and creamy ice cream. It is suggested that you use heavy whipping cream. It’s ideal if the fat content is at least 35%. The fat content is printed on the container.

Sweetened Condensed milk. This is the only sweetener we will use for this recipe. Condensed milk makes ice cream creamier, softer, and scoopable, in addition to adding sweetness. If you prefer, you can use fat-free or low-sugar alternatives.

Oreo cookies. I am using Oreo cookies because of their availability and flavor. You can also use other chocolate cookies you preferred. You can crush them or chopped them coarsely as you desired. If you want your ice cream to be less sweet, you can remove the cream inside and just use the cookies.

Tips on how to make cookies and cream ice cream

  • To ensure that the mixture whips up to a good volume, make sure the liquid ingredients are very cold. Refrigerate the condensed milk and heavy cream until ready to use. When I planned on making an ice cream, I always put my whipping cream and condensed milk in the fridge overnight.
  • It’s also a good idea to put the beaters and mixing bowl in the refrigerator/ freezer for about 30 minutes before using them.
  • You can use as many or as few Oreo cookies as you want. However, if you will add more, your ice cream will be sweeter. Another option is to use the cookies only by taking out the cream filling.
  • To get the best results, whip the cream really well. To whip the cream, you can use an electric hand mixer, a stand mixer, or a handheld blender.
  • When freezing the mixture, use a freezer-safe container. This ice cream was made in a rectangle 9”x5” metal loaf pan. Paper or plastic containers are good as well because they don’t make your ice cream super hard. I tried to use a glass container and it really frozen to the point that it is not scoopable.
  • Use a rubber spatula to ensure that all the ice cream gets transferred.
  • Remember to carefully close or cover your ice cream bowl, box or pan to prevent ice crystals from forming. I usually place a wax or parchment paper above my ice cream, plastic wrap will also work. However, if you are planning to consume it at a later time, place it in a container with a tight lid will help to prevent freezer burn. But seriously, do you think this ice cream will survive for more than a few of days in the freezer?!

How to serve

You can serve these cookies and cream ice cream as a dessert. This is also a good treat during summer to beat the hot weather. It’s refreshing and invigorating.

How to Store

Keep this ice cream covered with parchment paper on top in the freezer. If you are planning to consume it at a later time, place it in a container with a tight lid will help to prevent freezer burn. But I bet it will be gone in few days.

Ingredients
  

  • 2 cups heavy cream or whipping cream, cold
  • 1 can (14 ounces) sweetened condensed milk, cold
  • 1 cup or more Oreo cookies, coarsely chopped or crushed (or any brand of chocolate sandwich cookies)

Instructions
 

  • In a large mixing bowl, pour heavy cream. Using an electric hand mixer or stand mixer at medium speed, beat cold cream for around 2-3 minutes or until it forms soft peaks. At this point, you just need to thicken the cream
  • Add the cold sweetened condensed milk into the whipped cream.
  • Continue whipping at high speed for about 3-5 minutes until it comes to medium to stiff peaks, about 3-5 minutes.
    Note: Take care not to overwhip at this stage to prevent the cream from curdling.
  • Add in the chopped cookies and fold gently until combined.
  • Transfer mixture into a 8.5” x 4.5” loaf pan. Top the ice cream with additional crushed Oreo pieces if desired.
  • Cover with parchment or wax paper, lightly pressing to flatten.
  • Freeze for about 6 hours or preferably overnight.
  • Serve and enjoy!
